It’s a great choice for a comforting dinner or for impressing guests at your next gathering.

Ingredients:

For the Chicken Marinade:

1 lb (450g) boneless chicken thighs or breasts, cut into chunks

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons ground cumin

2 tablespoons ground coriander

1 teaspoon ground turmeric

1 teaspoon paprika

1 teaspoon garam masala

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

Salt to taste

For the Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon paprika

1 teaspoon garam masala

1 can (14 oz) diced tomatoes

1 cup heavy cream

1 tablespoon sugar (optional)

Salt and pepper to taste

Fresh cilantro for garnish

Instructions:

Marinate the Chicken:

In a large bowl, combine yogurt, lemon juice, cumin, coriander, turmeric, paprika, garam masala, garlic, ginger, and salt. Add the chicken chunks and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.

Grill the Chicken:

Preheat your grill or oven broiler. Thread the marinated chicken onto skewers or place on a baking sheet. Grill or broil for about 5-7 minutes on each side, or until the chicken is cooked through and slightly charred. Set aside.

Prepare the Sauce:

Heat vegetable oil in a large pan over medium heat. Add the chopped onion and cook until soft and golden brown. Stir in garlic and ginger, and cook for another minute.

Add cumin, coriander, paprika, and garam masala. Cook for 1-2 minutes until the spices are fragrant.

Pour in the diced tomatoes and bring to a simmer. Cook for 10 minutes, allowing the sauce to thicken slightly.

Stir in the heavy cream and sugar (if using). Simmer for another 5 minutes, until the sauce is creamy and well combined. Season with salt and pepper to taste.

Combine and Serve:

Add the grilled chicken to the sauce and simmer for an additional 5 minutes, allowing the flavors to meld together. Garnish with fresh cilantro.

Serve the Chicken Tikka Masala with basmati rice or naan bread for a complete and satisfying meal.
